Almost enjoyable

Carnitas with some crispy bits... guacamole... pico de gallo... salsa verde... lime juice... A surefire recipe for maximum deliciousness. Right? My brain said, “Yes!” But my tongue said, “Eh, it doesn’t taste horrible, so I guess that’s better than before.”

  1. I've never read anything so sad. Carnitas should always be a flavor explosion!

  2. How much cooking do you do in your van?

    1. Back when things were more normal, I'd cook every day, plus things that didn't need cooking, like sandwiches. I've cooked a handful of times the past month, but I ended up not eating much of it. That's why I've switched to experimenting at buffets.

    2. Makes sense I suppose your expenditures have gone up accordingly; just making mental notes for future reference.

  3. I noticed an article regarding some new studies on stem cell replacement therapy for damaged taste buds. Maybe your doctor could point you towards a clinical trial for something such as that if you don't see much improvement.

    2. google taste and smell clinic. I remember seeing mention of one that is using protein therapy. It was also a research facility. But of course any treatment centers need to be researched as to validity as some of them are basically rip-off that take advantage of desperate people in a desperate situation. Fortunately you are not desperate other than wishing things tasted yummy once again. I am so glad you had such great success with the cancer treatment.

  4. Maybe the carnitas weren't that great to begin with.

    1. I'd had them a few times at this place before, and they were excellent. They could've had an off day, but it's more likely my tongue.

    1. Most of my healthy nutrition comes from the liquid diet supplement my MD has me on. Any real food is a bonus.

  6. Those look really good. Dare we ask from whence they came? Good carnitas are hard to find.

    1. Filiberto's on 4th Avenue, Yuma. It's a chain, but their carnitas are good. And the tacos are huge.

  7. One of these days I may end up going all the way to San Antonio to indulge myself everyday for a few weeks on the style of Tex-Mex food I grew up with. Of course I will also visit friends and family while there but the desire to taste those cheese enchilads and the carnita/fajita tacos is the real draw. I do like the looks of the hill country too.
