Forgotten aroma

I’m cooking up some rice. Just plain old basmati rice by itself, not one of the rice-based side dishes from an envelope. It has been years (a decade?) since I’ve done this. The last time would’ve been when I was still living in a house and had a rice cooker.

So I had forgotten what boiling rice smells like. I was expecting nothing, because rice is just, oh, filler for something else. Rather neutral. At least that’s how I’ve seen it. But, mmmmmmmm, it’s mellow and pleasing and homey. It brings back good memories. And we can never have enough of those.

  2. 2 parts water to one part rice. Bring water to boil; add rice Two drops of oil will help keep from boiling over. Cover tightly, simmer on low for 12 minutes. Wait addtl 12 minutes. Voila!

Or in this instance, dump what I guess to be the right amount of rice in the pot; add what looks to be enough water for after the rice absorbs it and some of it boils off; turn on the stove and boil until the rice seems more or less done; drain off the excess water and set aside while cooking up ground beef, chorizo and onion; add dehydrated refried beans to rehydrate in the fat from the meat; add chipotle tomato sauce and the rice; simmer until convinced everything is ready; make a burrito.
