Three years ago, Irma opened a restaurant in Columbus, New Mexico. "This isn't like a big city where you have customers all day long, but I'm doing okay."
She asked where I was from and I gave her a quick rundown of my nomadic existence. Nodding toward the Rolling Steel Tent she said, "Yeah, that's all you really need. I have two houses—one here and one over in Mexico. I don't know why. I only use the bedroom and bathroom, and this place is my kitchen."
Back in that kitchen, she whipped me up some eggs over medium, thick bacon, and potatoes with onions. Excellent. I guess that's why she's doing okay.
